Salad Beasts and PB Treats

So that pretty much sums up what I’ve been eating this week!  Lunch has been one huge salad beast everyday and I love it!  I’ve been getting good at fixing my salads at night so I’m not spending tons of precious morning time chopping veggies-it definitely helps me not feel super rushed in the AM.

In this crazy bowl is boston lettuce, kale, shredded carrots, cucumber, grape tomatoes, sunflower kernels, chia or flax seeds, nooch, and sprouts from my Fresh Picks delivery all covered in Litehouse poppyseed dressing.  With a side of Sookie Stackhouse.  Definitely Dead has been my fav book in the series thus far-I love Quinn-I guess I’m just a sucker for big, brawny guys!

I’ve been working on cleaning up my snacking and this week I’ve been munching on blood oranges, bananas, apples, cocoa roasted almonds, Laura’s Wholesome junk food treats, and walnuts.  I also got a massive delivery from Peanut Butter Co. and am seriously OBSESSED with their Mighty Maple PB…it has taken some serious self control to put the spoon down!  Ruby wishes she could have some :)

 

For dinner I’ve been switching between a couple different things this week.  Rice bowls and “chicken” sandwiches.  I make my perfect brown rice in my cute little Zojirushi and then throw in whatever vegetables I have around…this one has sauteed mushrooms with flaxseeds and a frozen veggie mix.  I’ve also been on a teriyaki kick lately, and I’ve been throwing a little of this marinade in my bowls…a little goes a long way and its so good!!

My other current obsessions are “chicken” sandwiches made with Gardein seven grain crispy tenders.  These are sooooo good!!  Best fake meat I’ve ever had :)  I’ve been topping it off with some leafy lettuce, sprouts, and a little TJ’s Cowgirl Ranch dressing.  Yum!  If you are looking for a great vegetarian chicken stand-in definitely give these a try!

Tonight I enjoyed some vegan pizza from Ian’s Pizza in Wrigleyville.  They make all sorts of vegan options-vegan pepperoni, seitan sausage, a lasagna pizza, taco pizza, veggies….just about anything you can imagine!  They make vegan pizzas on a daily basis but only sell them by the slice on Thursdays.  (They’re also up for best vegan pizza from Peta so check out their facebook page for the link to vote!)  They also have yummy vegan baked goods from local bakeries, this week it was doughnuts-so tempting!  This week I got a slice of the vegan sausage and then another slice with portabella mushrooms and roasted red peppers-DElish!

On Monday I start boot camp at Kru Strength & Fitness and I’m super nervous/excited.  This entails 6 weeks of 1 hour strength training workouts on Mondays and Wednesdays at 5:30am and Saturdays at 9am.  We also have to participate in structured running workouts, diet, and supplement schedules.  I need to get ready for Mexico in June and Greece in August!!  I’ll keep you posted on my progress….and I’m guessing a little whining about how sore and tired I am may come along with that.  Hope everyone has a great Friday!

What are your plans for the weekend???? Mike and I are going to a party at a bowling alley tomorrow night and to a baby shower for one of my good friends on Saturday :)

  1. LV- So proud of your vegan and diet adventures. . .I’m going to have to pick up some of that stuff! This weekend PD and I are going to Milwaukee where I’ll be trying on some bridal gowns with Alicia and Abby…I’ll keep you posted if I find anything fab :)

    I love adding sprouts to my salads too! I also LOVE gardein products! They have so many yummy ones, I love their chicken finger yums!

  3. oh! i haven’t had mighty maple but i do have white chocolate wonderful at work and i’ve got to say that i think it ain’t so wonderful haha. maybe i’ll give mighty maple a go! although i have alwaays wanted the cinna raisin! have you had that one?

    • I’ve haven’t tried the cinn raisin yet, but I plan on it very soon! I agree that the white choc wonderful is a little eh, but if you like maple, you will love the mighty maple!
